VEGETABLE OF THE WEEK: CARROT

Carrots are one of those veggies that have become a staple snack in our house. My kids go for them after school dipped in hummus and with my goal of getting as many vegetables into them as possible, the carrot has become a close ally.

They really last the depths of winter and store so well in the fridge. They have amazing health benefits too.

Carrots are great for our vision as they have high levels of beta-carotene.  Beta-carotene is converted into Vitamin A which is also is great for protecting skin from sun damage. Carrots are also proven to reduce the risk of lung cancer, breast cancer and colon cancer.

I’ve been whipping up a green juice every morning with my new fancy kitchen gadget and so this smoothie recipe caught my eye.

And even though Spring is supposedly here, I still can’t stop making soup. This one looks delicious.

And let’s finish it off again with a yummy dessert that looks light and refreshing.

Fun fact: Carrots are a powerful antiseptic that is useful for preventing infection. Simply boil, mash and apply the carrot to your wound.
